Do I Have The Right To Do Food Reviews?


When I went into blogging one of the niches that I fit in was food, my love for food – I love eating simply put.  My love for food or eating was not enough, so I felt that I have to sharpen my ever faithful taste buds and knowledge when it comes to food.  And that is when my personal confusion hit me.


In the course of attending food events, I noticed that people that I am with would simply describe the food the simpliest way possible.  That it is delicious, period.  Some would add a line or two but it ends there, not fully explaining what works and what doesn’t in a dish.  As a writer, I believed that it is my responsibility to demystify some food charms and simply explain in its simplest form the reason as to why one food offering works and why one doesn’t.  But no matter how simple one tries it to be, food preparation is one complex art made of simple acts.

As I kept on attending some food tasting event, I am constantly teased on the way I give feedback because of the details I try to squeeze in such a short time (2 minutes or so).   Not harmful but teased nonetheless. 

My dilemma, how can you write about food when all you can say is “masarap siya”? I want to tell people the why’s behind the line “masarap siya” and not just end there.  There is more behind that phrase and it is either you ask the why or simply take it as it is, then the discussion either continue or ends.   My initial conclusion, either one knows the why or is simply lazy to share the why that s/he knows.  Knowledge is best shared not kept.  Kaya siguro hindi ako mayaman kasi bigay ako ng bigay ng ideas na pagkakakitaan ng iba.

Then my initial dilemma evolved and made a new point to ponder.  Could it be that I am being technical on food when in fact I am not a titled kitchen person aka chef?  I am a foodie.  I love food.  I am exposed to cooking and baking at a young age.  But still I am not a chef.  I am a home-cook_baker.   What right do I have to make a review on foods made by those who studied it and honed their craft with technicality and science?  So from, why others can’t say the why to self questioning of rights to comment on chef prepared dishes.  Interesting twist right?



From all this musing, I came to a conclusion that answers all.  I don’t have to be technical about how a dish is made thus demystifying it somehow but making it real for the readers.  I don’t have to compare myself on the style of others who shared their food experience.    I just have to be me!  A smoker who has active tastebuds, knows how things are cooked in theory or even has actual experience of it in the kitchen.  A home cook_baker, who enjoys reading books and analyzes how things are done in my mind.  An individual with an inquisitive, analytical mind that allows me to do flavor play before I get to do it live or understand the connection of one ingredient to the next.  A foodie who not only knows how to eat but cook and understands the complexity and simplicity of the dish and its preparation.  I am simply me.


True, I am a homecook-baker without any formal training in the kitchen under the eyes and guidance of those trained by known or even celebrity chefs but I know my food and the reason as to why I am trying out your creation is because I am a customer- part of the buying public.  My take on your food may fall on a small demographic (not common) but I still have a buying power and there are others like me out there.


So, do I have the right to do a food review?  My answer is yes.  To avoid all technicalities placed on a reviewer’s stand, instead of food review I will call it my food thoughts.  My thoughts on the how’s and why a food is great or why it should be revamped.  That is my stand as a blogger, foodie, home cook-baker and a customer.

When in the South, Go SOUTHBOUND CAFE

Are you going my way or the highway?  Either way, you are still going south and SOUTHBOUND Cafe it is.


Just opened in March 2019, this food shop has been making constant waves on the palate of the people of San Pedro, Laguna and nearby areas.  Complete with comfy seats, cool interior, good food and drinks selection and internet connectivity, this place is now a go to for people looking for good food and relaxing ambiance.

From snack items to filling dining food, they have it.  May it be for casual or intimate moments here at Southbound Cafe you will definitely enjoy your stay till your plate and glass is empty.  The price is reasonable for the mid-level working class.  Ayan, may idea ka na sana kung magkano ang presyo.  

Sardine Pasta

I have tried some (not yet all) of their food offerings and one thing is common to all. Busog ka! Hindi ka bitin at goodluck kung takaw mata ka!  The pasta serving may be in gourmet style and size, but you will feel it down your guts, flavor and all.  I love the sardine pasta!  It has an interesting nutty undertone note but the grease is so controlled.  It is pure technique and love for food! The flavor is controlled that everything you see on the plate can be tasted and not eradicated by the oil used.  Yes, everything . . .from the tomatoes to the garlic.

Tinapa (half)

Every food item in this cafe is well-crafted!  From the sandwiches down to the cold drinks - frappes and all - you will definitely have a favorite after trying out a good number of what they offer.  For meat lovers, try and expand your palate as you try their tinapa meal.  With a small serving of tomato-onion salad (trust me for that amount is enough) and vinegar on the side, you will enjoy this food offering because of how the fish was handled (smoked milk fish) and the egg's yolk is not well done.  Honestly, it reminds me of a breakfast I had during my hotel stay in Manila.  Yes, they have the usual tapa, longganisa and such but it sure is a delight to have good fish meal any time of the day.  You got it!  The so-called breakfast meal is available from shop opens (4:00pm) till closing (midnight/1a.m.).

Cafe Latte

You have to try their latte and white mocha hot drinks!  Everything is right in its flavor notes and temperature.  The coffee beans used is well sourced out.  We are talking about flavor above bean price.  When the owner was sourcing out suppliers for her cafe, she knows what she is looking for in taste and aroma of the coffee that will be her mark in the coffee shop industry.  It has a light chocolatey with a subtle nutty flavor and for coffee lovers, the aroma is so soothing.  NOT FOR THOSE WITH HEART AILMENT!  This is one strong bean and avid coffee drinkers will definitely enjoy every sip.  

The CHEF

Chef Zamora is good in his craft.  It is evident in all the dishes that comes out from his kitchen.  His baby back ribs are tender and worth sharing.  His personal recipe on a cheeseburger is also made available for all to enjoy.  He is what I would say a minimalist on a plate BUT he sure knows how to deliver flavor that you are not short-changed.  One thing I like about this cafe is its mission  on bringing good food without cutting on the required ingredients.  Not only is it evident on each plate served but also on each cup/glass served.  Their toffee crunch frappe has walnuts as toppings!  For marketers, you know how much a kilo cost and the lifespan of this ingredient.  As toppings! That says a lot on the seriousness of the chef, barista and owner.  You must not miss this one of a kind frappe - Popcorn Frappe.  It has a nice sweetness that reminds you truly of caramel popcorn and the topping is . . . surprise, popcorn!  Their smoothies are not to be missed also.  Try the blueberry or strawberry smoothie.  Perfect in this hot and sudden downpour weather that we are having right now.

I have tried their carbonara, grilled cheese sandwich, cheeseburger, chicken (which comes in plain, barbecue, buffalo and Parmesan), and I cannot describe everything in all its glory details because I am so full and is simply savoring the food experience.  The way flavors are brought out in equal notes is sure to make you want another serving to fully capture the simple complexity of a food.  You can be sure that it is good and filling food when served the Southbound Cafe way.


It may be an effort to find this shop, located on top of Goodyear Car Shop along the highway, because of all the various shop signage in the area but one thing is for sure . . .once there, you will comeback for another round of delicious food.  So if you are going south, go SOUTHBOUND CAFE!

SHINE XXII AD - A Night of Celebration for Anton Diva

Nothing new to the world of entertainment and performing, this diva is all set for her one night concert on June 15, 2019.

On June 15, at the Cuneta Astrodome, 8:00pm is a night of pure popular music entertainment as one once artist impersonator takes the whole stage as her own by rights and experience.  Produced by Teri Onor Entertainment Services Inc. (TOES) and directed by Peter Serano, please be ready for a night of music, celebration and possible laughter.

With a show titled SHINE XXII AD, witness how an entertainer celebrates her 22 years in the industry in one-night-only momentous concert.  More than an impersonator, this performer is ready to prove and show the bigger audience what it is being a diva.  Let us all join her that night on June 15.  Who is this diva?  You haven't guessed it yet?

ROSES FOR BEN, A Musical Written by the Young for the Young

When love and the past collides, what will happen and prevail?


Such is the topic discussed in this new musical to be staged by Artist Playground in partnership with Red Whistle, an HIV-AIDS educating/support advocacy group.  This June be ready for an original Filipino Musical to conquer the stage entitled Roses for Ben.


The artistic team of Roeder Camanag (Director), Jesse Lucas (Musical Director), Rayne Jarabo (Lyricist, Book Writer and Music Planner), along with the rest of Artist Playground have pulled their God-given talents to create this original for stage.  During the press/song preview, they are all aiming for this production to go on tour so as to help educate people of all ages in what HIV is and how it may affect your life.

Such is the storyline of this new musical.  We have Ben (main character), who has a successful career, a happy relationship with a female - one who we can say as contented in life but suddenly takes a turn for the unknown when he is diagnosed with HIV.  This is one disease he got from his ex-boyfriend.  Ben is what gen-Z'ers call as gender fluid.

Here is a musical that not only tackles the flight of those with the disease but is written by a youth of the present generation.  Rayne Jarabo is a product of the University of Santo Tomas.

Basing it from the song preview that happened, prepare to hear new and familiar music to some of the songs in the musical.  It is not a copy of music but simply an influence of what is heard, SIMPLY AN INFLUENCE (to make it clear).  With new talents on stage, Artist Playground is truly set to reach-out to the gen-Z'ers and beyond with this material.

CANDON MUSIC FESTIVAL, Set to Blaze this May 23-25!





When we thought things couldn’t go any hotter this summer, here comes an event that is sure to make jump and grind.  To those still planning for a last summer hirit, then come and enjoy a 3-days concert participated by more than 30 artists known locally and homegrown.   Welcome to the first ever grand  music festival set in the beauty of Candon, Ilocos Sur – The Candon Music Festival!

 Orchestrated by those who were part of the music program and supported by Congressman Eric D. Singson, this music festival is all set this May under the hands of National Artist for Music Mr. Ryan Cayabyab.  This concert is to be held at the Bagani Campo Concert grounds; a venue said to be capable of holding 7,000 viewers!

This is one musical event that crosses all genres!  With local performers (part of Ilocos) and homegrown artists (nationally known) performing, every night is a night of pure musical entertainment.  The Candon Music Festival is truly a celebration of music and talents of these young performers joining the event.  Not only would this be pure entertainment but also historic as well.  For during this festival that the newly musically arranged Candon Hymn is to be played for the first time!  The hymn was written by the mother of Congressman Eric D. Singson who is now nearing a century of age and was newly arranged by no other than National Artist for Music – Festival Director Mr. Ryan Cayabyab.

TRIBU Presents REMINISCENCES - A Philippine Independence Tribute Concert



Did you know that we will be celebrating our 121st year of Independence this June of 2019?  Yes, that is true!  Definitely celebrations left and right may popped along the way but there is no other better way to celebrate but by bridging the gap among the classics, the millenials and Gen Z’ers thru music.

This June 11 and 12, this brave group of singer-performers shall embark on a musical journey of bringing the Filipino classics into the taste of the new generation and beyond.  Ephesus Teatron Group Inc – TRIBU is a sensational group showcasing all Filipino classical hits.  Their vocal prowess knows no time and boundary.  Each member has a distinct vocal quality and yet blends together forming an audial quality that will put any band to shame.  Composed of:
Sweet Samaniego Buchanan – coloratura soprano,
Margarita Roco – lyric soprano
Steven Hotchkiss – baritone
Onyl Torres – baritone
Terrence Guillermo – tenor
Red Nuestro – tenor
Kim Dominik Sarmiento – piano

The whole performance is divided into two acts showcasing the different songs of the islands and the history behind it.  2nd Act gives way to patriotic / revolution songs Filipino seldom hears.  The aim is to make us millenials and Gen Z’ers realize that there is more to our culture and music that makes it stand the test of time and that we can truly be more than what we initially thought we are. 

The concert is to be held as the Carlos P. Romulo Auditorium, RCBC Plaza, Makati City on June 11 and 12.  Come and join the celebration and walk away with pride for our country as we relit the fire of true Nationalism in this age of gadgetry, digital and disconnect.

When Heritage Becomes More Than Words


It was a hot day (as usual here in the Philippines during summer season) and arriving at the venue of the day’s event, I was quite thankful for the coolness of the hall where the discussion regarding conservation heritage was to take place.  This event is actually part of the National Heritage Month celebration, an event set by the Heritage Conservation Society, National Commission for Culture and the Arts (NCCA )and partnered with the Far Eastern University through its President’s Committee on Culture (PCC-FEU).

As the attendees slowly trickled in the room, I took the chance to observe and was able to chit-chat with one of the people behind the partner organization for the afternoon talk which was the Heritage Conservation Society (HCS).  The HCS is a group of individuals with diverse occupational scope but joined together in the task of making people know and take action in the conservation and preservation of what is and can be considered built heritage.

Ok, I will not go on a technical discussion on what heritage, built, and all things connected with it for one, I am not an expert. Two, I don’t have the experience and know-do on this things. Three, I came there to listen and see where it is all going for.  One thing is for sure, I learned things that day that made me reevaluate and reassess how I view old and so-called meaningful sites in the country.  It was half a day of learning and true enough, it has achieved its goal – in my opinion.

Welcoming us attendees that day were Mr. Martin Lopez, Director of PCC-FEU and Ms. Liliane Rejante Manahan, HCS Chairperson.  It was a good crowd coming-in for it was a blend of young and the dynamically young – all with diverse reasons for being there.   The actual session is divided into three parts, namely:  (1) a basic understanding of what heritage is and what the Heritage Law is about – covered by HCS President, Atty. Mark Evidente; (2) the present technological phase of heritage sites documentation by one of the society’s  Board of Trustee and President of Digiscript, Inc (Mr. David Alampay); and lastly a walkabout in FEU – this 91 year old declared heritage structure – by Mr. Martin Lopez.  What can be initially envisioned as a long and possible dragging afternoon, turned out to be an afternoon of intellectual enjoyment capped with a moment of music in its newly retrofitted auditorium.

In my humble opinion, this type of learning activity should be made easily available in all schools – private and public, city and provincial alike.  Why do I say so?  For if the society is aiming for continuity in the decades to come and volunteerism is a strong factor in its present operational condition, the status of built sites – presumed and considered heritage, this activity knowing the Heritage Law is a good fire starter in the hearts of the youths who will possibly continue its mission.  When I say easily available I meant free.  Now a talk-discussion with working individuals connected or not to a built site is a separate activity and can be considered sponsored or with paying attendees thus funding can be made for  future activities.  What about those tagged as “masa”- the common people or grass roots?  For them a specialized themed discussion is needed to be planned and set. They will not be concerned if a building gets torn down, as long as they get to have a job, shelter and food on the table- basic necessities.  But if the discussion on heritage conservation can show how it will affect their basic needs on a positive note, then you have a force that will police them in the act of preserving a site. 

Marami tayong hindi pa alam tungkol sa isang heritage site.  Ano ang presumed at ano ang declared?  Ano ang “relevance to all and relevance to a specific group/individual  alone”?  At hindi natin malalaman ito hangga’t hindi tayo ang apektado o maaapektohan.  Tama o hindi?

Continual education is the key in keeping the fire of proper drive for heritage conservation.  Knowing what is relevant and important to the majority is the seed from which the fire of conservation will spark strongly.  Mind guided by the heart and heart kept in check by the mind is the proper way of keeping things in perspective when it comes to preservation and conservation.  I believe (pageant mode), that culture and history is not just for the rich and able but for all.  Hindi lang siya pang mayaman kundi para sa lahat na may yaman dito, aka TAYO. 

From what I gathered, conservation groups aims to create educated and informed individuals and not emotionally-driven fanatical – again this is just my opinion on things. Mahirap na.  Mabuti ng malinaw at baka mategi pa sa nasasabi.

 I stepped into FEU grounds with the sun still shining and stepped out with the stars already shining in its usual dark back-draft. One thing is for sure, it was tiring but enjoyable plus I learned something new . . .that is the most important part, learning something new (daily or not) in your life and society.  Thank you NCCA, PCC-FEU and HCS!  A special thanks goes to Mr. Joselito Tolentino for paving the way for us his media family for an afternoon such as that one.
