Here is the recipe that I made
during the Taste Setter hands-on/competition event that was held today, April
24, 2018 at the Magsaysay Institute Center of Hospitality and Culinary Arts in
Pioneer Woodlands, Mandaluyong. It was a fun experience! Hope you get to enjoy my creation too!
Crepe Bites:
For the crepe
2 eggs
1 cup flour
1 ½ Tbsp of Jiffs Crunchy Peanut
Butter
1/8 cup sugar
2 Tbsp of Choco syrup
6 dashes of Tabasco Green Sauce
2 Tbsp of butter (unsalted)
For the crepe sauce
1/3 cup water
¼ cup sugar
Peanuts from the strained crepe
3 – 4 pcs of lychees slices
1/3 of an orange, juiced
1 banana sliced
PROCEDURE:
For the crepe
- - Beat eggs.
- - Add flour, peanut butter and sugar.
- - Mix till smooth.
- - Strain and keep the peanuts strained coming from the peanut butter.
- - Add Tabasco sauce and choco syrup.
- - Heat pan (12 or 14 inches in diameter)
- - Melt butter.
- - Pour in crepe batter and spread making a very thin crepe. Don’t worry of tear at the sides for you are to trim it off later for presentation.
- - When you see air bubbles forming at a good part of the crepe, flip it over to cook the other side.
- - Remove from heat.
- - Repeat till all of the batter is cooked.
- - Set aside for assembly later.
For the sauce
- - In a sauce pan, heat water and sugar together and boil. Make sure that it is on medium heat and not high. You have to watch it to avoid burning later.
- - Once boiling, add the strained peanuts and continue stirring.
- - Add the sliced lychees and orange juice. Continue stirring.
- - When water is reduced and desired thickness is achieved, remove from heat and cool for about 5 minutes.
TO ASSEMBLE
- - Using another circular plate smaller from the formed crepe, trim the crepe of any breaks/tear.
- - Placed in banana slices and fold the crepe forming a half circle.
- - Repeat the process. You will be able to make 4 folded crepes.
- - Pour the sauce on top of the crepes.
- - For added design and flavor, drizzle some chocolate syrup.
- - Serve and enjoy!
SUMMER KICK
This is my take of a cooler with
a kick. You will only need five (5)
ingredients and a blender.
In a blender place in 1 cup of
strawberry jam, ¼ cup apple juice, 1 Tbsp of peanut butter, ice and 10 dashes
of Tabasco Habanero Sauce. Blend till
smooth. Pour into a glass and decorate
with mint leaves or trimmed pandan leaves.
Enjoy a cool refreshment with a
heat kick seconds later. A mocktail that
is not a mocktail.
